Ortiz tuna is fished in the Bay of Biscay between France and Spain and then treated and packed with age-old preservation methods that ensure the freshness of the fish.
All Ortiz products become better over time – they age like a good wine.
Ortiz anchovies are caught during the coastal season, using traditional fishing methods. The anchovies are then classified by size, preserved in salt and matured in
barrels for a minimum of six months. This process intensifies the flavour and texture of the anchovies. Once the anchovies reach the required maturity, they are handfilleted and packed in olive oil.
